The Adventure Begins

 

18 lb. fresh turkey

I brined it for 24 hours.

For 2 gallons of brine (just covers my bird in the pot):

  • 8quarts of cold water
  • 2 cups kosher salt
  • 2 cups sugar
  • 6 bay leaves

Basted with mixture of

oil

entire head of German White garlic

paprika

garlic powder

 

First hour at 500 degrees F.

Took about an hour to bring temp down to 350.
